My Curry Recipe And
Mental Health Talk

Hello everyone, the last few years haven’t been easy and alongside the global pandemic we’ve seen a rise in the cases of eating disorders.
It’s no secret that at 16 I discovered I had anorexia (something that caught me off-guard), from there I embarked on a journey of recovery that lasted years and demanded the help of family, friends and supportive therapists who didn’t let me give up on life and what life could be. Today I am healthy, cooking and the whole disease seems like a bad and very distant dream but for those who are struggling today, I’d like you to know that it is possible, and that I believe in you. In the video I make a curry dish that’s easy to prepare for all those who want to get back into cooking and learn to enjoy delicious food. And for those who are not ready yet, you should know that that’s fine too, recovery is a long process and it’s fine and legitimate.

Prep

I usually start with the prep work: I cut the veggies (onions, garlic, bell peppers if you’ve got ’em, maybe mushrooms), each of which go in a separate bowl. Next I take whatever frozen veggies I have (broccoli, chickpeas, green beans, cauliflower, etc). Last but not least I cut up some tofu and start cooking.
The fresh veggies go in a pan with sesame oil and soy sauce, into which the tofu is added a little later. Next I add seasoning – more soy sauce, garlic powder, chili flakes, smoked paprika, and sometimes peanut butter or soy sauce flavored sesame seeds. In the meantime I put the frozen vegetables in a pot with hot water to heat up.Once the pan veggies are ready I turn off the heat and wait for the frozen veggies to finish defrosting. As soon as that’s done, I strain out whatever water’s left in the pot and add in the pan veggies.Now all that’s left is the easy part, pouring in some coconut cream and curry paste and stirring. I like to add some more seasoning at this point, some more garlic powder, smoked paprika, and chili flakes, and the curry’s done! Serve over some white or wild rice and enjoy.
